Ok so I got this eevee good ivs 30 hp 31 def 29 sp def with hidden power 68 grass i was wonderin wat i should evovle it into.

Evolve it into Umbreon, it has 394 HP, 350 Def. and 394 Sp Def.

I suppose Espeon(sp), It has somewhat decent Sp. Atk., and sence Hidden Power is a Special attack, You can make alot of damage, and sence it's your Eevee's hidden power is grass, you can defeat water, ground, and rock types easily! 
But than again, You may need to evolve Eevee to whatever you didn't record data on your PokeDex.

lol at espeon and jolteon my eevee is sassy sp def+ speed- and since both rely on speed thats bad
